Ingredients
Beef ribs, 2 lb Shiitake Mushrooms, 1 cup piecesPeppers, sweet, red, raw, sliced, 1 cup Onions, raw, 1 cup, choppedGarlic, 2 tspDiet Coke, 20 oz Barbecue Sauce (to taste)
Directions
This recipe makes roughly 5, 7oz servings. Pour Coke into baking dish (regular coke i find works best). Place beef ribs into dish with space so it has room to marinate. Bake in covered dish at 325 for 2 hours.(you could also use a crock pot). Leave the beef in oven (or crock) to rest with heat off. Mix mushrooms, onions, red bell peppers and garlic in frying pan and saute. Remove beef and serve on vegetables; add bbq sauce to taste. (Baking the beef in the Coke not only carmelizes it but also tenderizes it from the acids in the soda.)

    I used a rack of ribs in the slow roaster. I used Coke Zero. We loved it. We have been cooking ribs for years. I love the shortness in times and the taste. We do not do BBQ sauce. I fixed the vegetables and I added a splash of Worcestershire sauce. The family loved it. - 4/11/09

    I used a pork rub on the ribs and then added the coke and baked for 2 hours at 325 as suggested and these came out FANTASTIC! I also added BBQ at end. Definitely needs plenty of seasoning for taste, but this cooking method makes the most tender ribs I've ever had! Will make this to impress everyone! - 8/17/08

    It was very good. I had a package labeled "Boneless Beef Ribs (Beef Chuck)" so I knew it wasn't actually ribs. I cooked as directed (except covered, which was not specified), then finished on the stove in sauce pan until the chuck roast fell apart, added BBQ sauce and served on buns! Yeah! - 5/9/10

    These were ok, I used country style pork ribs, I think it would be much better with baby back ribs, since country style has too much fat on them to be baked in a dish. We put the left overs in a pressure cooker the next day and they were even better! - 4/10/09
