Devin's Oatmeal Cranberry Cookies

1 cup splenda1/2 cup light brown sugar, packed1 1/2 cups all-purpose flour1/2 cup smart balance buttery spread, light1/2 canola oil3 cups old-fashion oats1 cup dried cranberries6 tbsp liquid egg whites1 tsp vanilla extract1 tsp cinnamon1/2 tsp nutmeg1/2 tsp baking soda1/4 tsp salt
Makes 36 cookies
1. Preheat oven to 350F
2. Lightly grease cookie sheet
3. In a large mixing bowl, cream together butter, oil, brown sugar, splenda, egg whites and vanilla. In a separate bowl, mix together flour, baking soda, salt, nutmeg and cinnamon. Add flour mixture to sugar mixture. Roll in oats and cranberries
4. Place rounded spoonful of cookie batter onto greased cookie sheet. Cook for about 9 minutes, and let cool for two minutes before moving cookies to separate tray. **NOTE: cookies will appear to be undercooked, but will continue to cook during cooling time.
