Healthy Chicken Enchilada Soup

16 ounces of Boneless Skinless Chicken Breast48 ounces of Low Sodium Chicken Broth1 Can of Green Enchilada Sauce2 Cups of Frozen Peppers and Onions 1 Can of Tri Beans 1 Can of Black Beans3 tbsp Cumin2 packets of Trader Joe’s Taco Seasoning Mix 1 tsp Cayenne Pepper 1 Can of Fire Roasted Diced Tomatoes
-Pour chicken broth into a large 5 quart pot.
-Turn on medium high heat and place chicken into pot and cook with spices for 25 minutes with lid on. Reduce to simmer once boiling.
-Once cooked, remove chicken and set aside. Add frozen peppers and onions to pot to cook with drained and rinsed can of beans and enchilada sauce. Shred chicken and put back in pot. Stir occasionally and continue to cook for 15 minutes.
-EAT UP
Serving Size: Makes about 8 one cup servings
