Kale-barley salad

Ingredients
3 cups cooked pearled barley4 cups kale leaves (large stems stripped out), ripped or chopped into bite-size pieces1/3 cup packed raisins1/3 cup pine nuts4 Tbsp olive oil2 Tbsp balsamic vinegar1/3 tsp salt, to taste
Directions
Toast pine nuts in a dry skillet. Combine nuts, raisins, and barley in a large bowl and dress with balsamic vinegar and 2 Tbsp olive oil.

Saute kale in remaining 2 Tbsp olive oil. Toss with other ingredients and add salt to taste. Best served warm or room temperature.

Serving Size: 10 servings of about 1/2 cup each.
