3/4 cup Elmhurst unsweetened almond milk1 date1/2 cup carrot chunks (or whole baby carrots), fresh or frozen1 Tbsp raw cacao nibs1 Tbsp instant coffee/espresso powder1/2 large banana, frozen1/4 cup frozen blueberries1 Tbsp cocoa powder (unsweetened)1/4 tsp vanilla extract1 cup fresh spinach leaves
Blend date, carrots, almond milk, cacao nibs, and instant coffee powder until smooth. (Note that dates and cacao nibs take longer to blend than other ingredients.)
Add all other ingredients except spinach, along with enough cold water to cover; add spinach. Blend until smooth.
Serving Size: Makes one 16 oz. smoothie
