Dave's Cheesy Squash w/Peppers and Onions

1 lb Summer Squash, sliced (2 yellow squash, 7-8 inches long) 3/4 lb Baby Zucchini, sliced (2 zucchinis, 6-7 inches long)2/3 cup grated Parmesan Cheese (2-1/3 cup portions) 5 tbsp unsalted Butter1 Medium Green Bell Pepper, sliced and diced 3-4 spring onions, diced
1. Preheat oven to 350 degrees.
2. Spray an oven-safe baking dish or casserole pan with non-stick cooking spray.
3. Place ingredients in layers: summer squash, zucchini, onions and peppers, 1/3 cup of Parmesan cheese, 2 1/2 tbsp of butter in pieces. Repeat that layer again.
4. Bake for 20-30 minutes at 350 degrees.
