Julie's Chicken Salad

Ingredients
4 Stalks of Celery2 Large Carrots1 Small Onion2 Boneless Skinless Chicken Breasts1 T dijon2-3 T of Miracle Whip LightSalt & Pepper to taste
Directions
Using a Cuisinart, or by hand, finely dice the celery, carrot, onion and chicken. Mix together. Add dijon mustard and just enough miracle whip to help everything stick together. Season with salt & pepper. Yields 4 generous servings.
