1 Lb. Chicken BreastGreen Beans (to taste-I like a lot)1 tsp Extra Virgin Olive Oil1/2 container Prik Khing Curry Paste (find it at ur local Asian market)1 lime to squeeze on top
Add oil and paste and cook until fragrant. Add chicken and a little water. When it's almost done add the beans and cover until beans are al dente. Serve over rice (not calculated in recipe-I like the steamable InnovAsian Stick White rice but brown is the healthier choice but I'm lazy) and squeeze some lime juice over top it all.
The recipe also calls for kefir lime leaves but I can't get those where I live.
