Mushroom Stuffed Chicken Breast (no breadcrumbs)

2 whole chicken breasts pounds out and sliced in half to make 4 total pieces (cutlets)1 onion finely chopped3 cloves of garlic finely chopped1 8oz container of mushrooms finely chopped1 zucchini finely choppedGround Almonds 2-3 TbspOlive oil for sauteeing2 Tbsp red wine (optional)
Preheat oven 350 degrees.
In a saucepan:
Sautee onion, garlic, zuchini in olive oil.
When soft add mushroom.
Add a little red wine if desired.
Wait til liquid evaporates.
Stir in some ground almond to bind the ingredients.
Place stuffing on 1 chicken breast and roll up.
Secure with toothpicks.
Optional: spray chicken with olive oil spray and coat with ground almonds
place toothpick side down in baking dish.
Bake about 30 minutes til ready.
