Mexican Omelet

Ingredients
1.0 serving Omlette, 1 whole large egg, 3 large egg whites2.0 tbsp Salsa, Tostitos Chunky Salsa, mild1.0 serving Weight Watcher's - Shredded Mexican Blend Cheese1.0 oz Cheese Feta Crumbled President 1 oz (28g) = 70 cals 1 inch cube
Directions
Spray skillet with non-stick cooking spray and heat on medium-high. While skillet is getting hot, beat egg and egg whites with a fork until well mixed. Pour into hot skillet. Cook for about 3 minutes. Gently flip and cook the other side for 1-2 minutes more. Add toppings to half of the omelet, saving about a TBSP of feta cheese. Fold over the other half of omelet. Add the rest of the feta cheese and serve with chopped chives, if desired.
