ZUCCHINI CASSAROLE

Ingredients
3 cup, sliced Zucchini 1 serving Carrot Sticks (baby) 3 oz serving .5 cup, chopped Onions, raw .5 cup, pieces or slices Mushrooms, fresh 1 can (10.75 oz) Cream of Mushroom Soup 1 cup, chopped or diced Roasting Chicken, light meat 1 can (10.75 oz), prepared Cream of Celery Soup .25 cup Sour Cream 4 serving (makes 1/2 cup prepare Stove Top Stuffing Mix 1 tbsp Extra Virgin Olive Oil
Directions
Saute mushrooms and onions in oil; chop and peel 6 zucchinis; Combine everything but stuffing and put in a buttered 9x13 dish.
Preheat oven 350 degrees. Prepare stuffing according to directions.
Omit butter if you prefer. Top vegetables evenly with stuffing.
Bake until bubbly and slightly browned, about 35-40 mins.
