Keto Pork Chow Mein

Ingredients
16 oz Pork Shoulder (pork butt, picnic roast) 4 stalk, medium (7-1/2" - 8" lon Celery, raw 1 large Onions, raw 1 cup Bean sprouts 1 cup (8 fl oz) Chicken Broth 2 tbsp Soy Sauce .25 tbsp Xanthum Gum - Bob's Red Mills (1TB,9g) .083 =.25ts (by CORLISSTRIEDIT) 1 1tsp Coconut Oil
Directions
Cut pork into cubes, brown in oil.
Slice celery into diagonal slices, slice onion lengthwise.
Add to pan.
Add chicken broth.
Cook for about an hour.
Add bean sprouts, cook another 10 minutes or so.
Add pepper and soy sauce to taste.
Take about a quarter cup of sauce add xanthum gum and wisk until all lumps are gone. Pour back into pan. Add addtional water or stock until sauce is the consitancy you like.
