Oven Baked Cornflake Chicken

Ingredients
3 cups Cornflake Cereal3 Tbsp All Purpose Flour1 tsp Paprika1/2 tsp Onion Powder1 tsp Ground Rosemary (or Sage)Salt & Pepper, to taste1/2 cup Skim Milk1 lb Boneless, Skinless Chicken Breasts
Directions
1. Heat oven to 375. To make coating, put cornflakes into a sealable gallon size plastic bag and crush cereal with palms. Open the bag and add flour, paprika, onion powder and rosemary. Shake salt and pepper to your tastes into bag, reseal and shake well until combined.

2. Pour milk into shallow bowl. Rinse and pound chicken (if thick breasts). Dip one piece into milk, flipping over to cover both sides. Then drop into the bag of cornflake mixture and shake until chicken is thoroughly coated. Place chicken on cookie sheet sprayed with Pam. Repeat until all the pieces of chicken are coated. Discard any leftover coating.

3. Bake for 40 mins or until done. Turning chicken over half way.

    This is a really great recipe. Tastes just like momma used to make. It did however make enough for about 8 servings when I followed the directions. - 1/22/09
