Beef Stoganoff

1 cup Mushrooms, canned 1 small Onions, raw 1.5 cup Campbell's Low Sodium Beef Broth (by JILLSMYTH) 1 cup Sour Cream, reduced fat .3 can (6 oz) Tomato Paste 2 fl. oz Sherry, dry 24 oz Beef, top sirloin .5 stick Butter, salted
Cut steak in ¼ inch x 1 inch strips and dredge in 1 ½ Tbsp flour
Heat butter until foamy in heavy frying pan
Add meat and fry until brown on one side.
Turn meat and add onion - cook until onion is transparent.
Remove meat and onion from pan.
Blend flour into drippings and add consommé, tomato paste, salt and dry mustard - cook stirring constantly until thickened.
Add meat and onions, mushrooms with liquid and sherry - continue cooking until meat is tender.
Add sour cream and heat thoroughly but DO NOT BOIL.
Serve over cooked rice or egg noodles
