Sweet Potato Pineapple Casserole

1/2 cup Butter, salted 2 large Egg, fresh, whole, raw 1 tsp Cinnamon, ground 1/8 tsp Cloves, ground 1/2 tsp Nutmeg, ground 1 tsp Vanilla Extract 4 5" long Sweet potato 3/4 cup serving Stevia in the Raw 1/2 tsp NoSalt 1 20 oz can Del Monte 100% Juice Crushed Pineapple In Its Own Juice2 oz pecans - chopped
Place sweet potatoes in a large kettle and cover with water; bring to a boil. Boil gently until potatoes can easily be pierced with the tip of a sharp knife, about 30-45 minutes. Drain; cool slightly.
Peel potatoes and place in a large bowl; mash. Stir in butter and sugar until butter is melted. Add pineapple, eggs, vanilla, nutmeg and salt.
Spoon into a greased 2-qt. baking dish. Top with pecans or marshmallows. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean.
