Tuna Burgers with Tapenade and Tomatoes

Ingredients
TAPENADE:4 ounces pitted Kalamata olives2 tablespoons shallot2 tablespoons chopped fresh mint2 teaspoons chopped fresh thyme2 teaspoons fresh lemon juiceBURGERS:2 pounds chilled fresh tuna steaks, finely diced2 tablespoons chopped drained capers2 tablespoons Dijon mustard1 teaspoon minced fresh thyme1 teaspoon freshly ground black pepper3/4 teaspoon kosher salt1 large tomato, sliced2 cups baby arugula
Directions
TAPENADE:
Blend all ingredients in food processor to coarse puree. Season to taste with salt and pepper.


BURGERS:
Gently mix diced tuna and next 5 ingredients in large bowl. Shape into six 4-inch diameter patties. Place on plate. Cover and refrigerate at least one hour and up to one day


Spray grill rack with nonstick spray. Heat grill to medium high. Cook patties 4-5 minutes per side.


Serve burgers on focaccia spread with tapenade. Top with tomato slice and arugula.
