Creamy Chicken Scampi

Ingredients
6 serving Chicken Breast meijer bonless skinless 1 6oz pc per serving (by RISENABOVE) 2 cup, chopped Green Peppers (bell peppers) 3 cup, chopped Onions, raw 2 cup Swanson Chicken Broth 99% Fat Free 4 oz Cheese, Mozzerella, Kraft part skim 4 cup Spaghetti Squash 2 oz Cream Cheese 3 tbsp Extra Virgin Olive Oil 3 tbsp Balsamic Vinegar .5 tsp Salt 1 tsp Pepper, black 1 tbsp Basil 1 tsp Thyme, ground 3 clove Garlic
Directions
Cut and clean spaghetti squash, put in a glass pan, half fill with water and microwave for 25 minutes.

Slice Chicken breasts thin, Onions thin and green peppers as desired. Use olive oil to coat pan, add garlic, pepper and herbs, then chicken to sear. Once chicken is not visibly pink, add onions and green peppers. Cook til soft. Keep adding chicken broth for moisture until onions are clear. add the rest of chicken broth, cheese and cream cheese and stir until melted. Drizzle with balsamic and add a sprinkle of Cayenne. Serve over squash for a filling meal.
