Ingredients
1.0 medium Carrots, raw1.0 cup, cubes Sweet potato1.5 cup Beans, great northern6.0 cup (8 fl oz) Chicken Broth or Bouillon3.0 cup kale - Glory chopped kale, fresh0.5 serving Bob's Red Mill Organic Farro1.0 1tsp Olive Oil1.0 tsp Garlic
Directions
Saute chopped garlic in olive oil. Add the broth. Wash, peel, and chop the vegetables. Drain and rinse the beans. Rinse the Farro. Add all ingredients to the broth and simmer for 20-30 minutes. Serve with grated parmesan if desired.
