Low Fat Cabbage and Potato Soup

Ingredients
1 serving Bacon, John Morrell, Hardwood Smoked Bacon (2 slices/17g) 2 cup, sliced Onions, raw 2 medium Carrots, raw 2 medium (2-1/4" to 3-1/4" dia.) Potato, raw 1 head, small (about 4-1/2" dia) Cabbage, fresh 24 oz Kirkland Chicken Stock 2 tbsp Parsley, dried .25 cup Parmesan Cheese, grated
Directions
Combine all ingredients except salt, pepper, and cheese. Simmer partially covered for 1 1/2 to 2 hours. Season to taste. Pour into soup bowls and garnish with cheese.
