Baked apple pancake

Ingredients
4.0 large Egg, fresh, whole, raw1.0 tsp Cinnamon, ground2.0 tbsp Coconut Oil0.25 tsp Baking Powder0.25 cup Granulated Sugar3.0 tsp Granulated Sugar0.75 cup Flour - Gold medal all purpose flour2.0 serving Apple - Gala, small0.75 cup Milk, 1%
Directions
Preheat oven to 400 degrees. Place oil in pan and place in oven to melt. Mix flour, sugar, baking soda, milk, eggs, 1T sugar together to make batter. Mix 1/4 c sugar with cinnamon to make sprinkle topping. Place sliced apples in pan and top with batter and then sprinkle with cinnamon/sugar mixture. Bake for 20-25 min. Serving Size: Makes 8 slices
