Flounder a la East Point Inn

Ingredients
12 oz Flounder (fish) 0.125 cup Bread, Progresso Bread Crumbs, Garlic and Italian Herb 2 tbsp Parmesan Cheese, grated 3 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average 1.5 tbsp Earth Balance Natural Buttery Spread
Directions
Preheat oven to 350 degrees. In a small saucepan melt Earth Balance. Add breadcrumbs and parmesan cheese. Season fish with salt and pepper. Place fish in glass baking dish. Spread 1/2 of breadcrumb mixture on top of fish. Place sliced tomato on top. Bake 10 minutes or until fish is almost cooked through. Change oven to broiler setting. Sprinkle remaining breadcrumb mixture on top of fish. Broil 1-2 minutes or until golden brown.
