Curried Chickpeas with Cauliflower

1.5 cup Bush's Garbanzos (chickpeas)1.0 small Onions, raw1.0 tbsp Olive Oil2.0 cup Cauliflower, raw2.0 tbsp Pataks Mild Curry Paste0.5 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)1.5 cup Del Monte Diced Tomatoes, No Salt Added
Sauté onion in olive oil over medium high heat. Add curry paste and cook for 30 seconds or until fragrant. Add cauliflower and chickpeas; toss to combine. Add diced tomatoes and 1/2 cup or so of water. Cover and simmer until vegetables are tender. Uncover, turn off the heat, and add coconut milk. Serve hot.
