Sushi

Ingredients
3 cups White Rice, medium grain 3 cups Water9 tbsp Vinegar - Natural Rice Vinegar 1.5 tsp Sugar 1.5 tbsp Salt10 Sushi Nori sheets3 Avocados, California (Haas), sliced thinly2 medium Carrots, cut into long thin strips5 Mini Cucumbers, cut into long thin strips10 Green Onion stalks, sliced in half lengthwise8 oz Imitation Crab Mates (Leg Style) 3 oz Smoked Salmon20 Cooked Small-Medium sized shrimp
Directions
Rinse rice in colander until water runs clear. Combine with 3 c water, bring to boil, and simmer 20 min. Allow to cool 10 min. Combine rice vinegar with sugar and salt; microwave 1 min; stir until dissolved. Toss with rice, waving plate over rice until no longer steaming. Cover and allow to cool.
