2tbs Olive oil4 Turkey bratwurst cut into pite sized pieces3/4c Green pepper chopped1 Yellow pepper chopped1 Med. onion chopped5 Cloves garlic minced1/3lb Button mushrooms sliced and stemed1c Mustard greens chopped3 Med. ears of sweet corn removed from cob2tbs Fresh parsley1tbs Lemon juice to taste
Chop veggies and brats into pite size pieces, cook, in olive oil, until veggies are tender and brats are cooked through . Season with parsley, and lemon juice. At the same time cook couscous according to package directions.
Serve meat and veggie mixture over 1/2c cooked couscous.

I made this recipe last night and my wife and I enjoyed it. I made some additions to rid our fridge of veggies that needed to be replaced. I also uped the amounts of vegies that were called for and only used 3 Brats (came in 6 pack so split it up for two meals). Overall I thought it was a good meal. - 2/24/10
