Green Monkey Shrimp Stuffed Flounder

6 oz shrimp 12 oz Wegmans - Wild Caught Flounder (by EMPHYREAN) 0.5 cup Cheese, Mozarella, shredded low moisture part-skim, Crystal Farms 2 serving Breadcrumbs (Progresso/seasoned) 1/4 C. (28g) 2 tbsp Butter, unsalted 1 1tsp Olive Oil
Thaw and dry you filets, salt and pepper them.
Melt butter, add onions and some garlic, then add the shrimp when onions cooked down. Cook shrimp till opaque, squeeze in quarter lemon. Add breadcrumbs and cheese, stir to make a filling. Roll up filets with some stuffing, then top with a tiny drizzle of olive oil and some paprika.
