Marinated Green Bean Salad

Ingredients
1 pound fresh green beans, trimmed3 tbsp olive oil 1 tbsp red wine vinegar 2 tbsp chopped Shallots (1 small)1/8 tsp Granulated Sugar 1/8 tsp dry ground mustard
Directions
Steam or boil green beans until bright green and tender crisp, about 3- minutes. They should NOT be mushy. While beans are steaming, prepare a large bowl with cold water. Immediately drain beans and place in the cold water until they are completely cool. Pat dry. Return beans to dry bowl.

Whisk EVOO, vinegar, shallots, sugar and ground mustard in small bowl. Pour over green beans and toss to coat. Cover and chill for at least 1 hour and up to overnight.
