"Almond Joy" KETO Cookies

Ingredients
3 tbsp Cocoa, dry powder, unsweetened 2 Cups Shredded Coconut Unsweetened (Bob's Red Mill) .5 Cups golden barrel coconut oil 0.25 cup Almonds, raw (about 25 whole almonds) 6 drops Better Stevia liquid organic extract
Directions
Melt coconut oil in a medium sized sauce pan over low heat, remove from heat and stir in cocoa powder, liquid stevia, coconut, and almonds.

Drop by spoonfuls into 20 small mounds on a parchment or wax paper lined cookie sheet.

Refrigerate 1-2 hours until hardened.

Store in airtight container in fridge.
