Walleye Beer Batter Bites

48 oz Walleye (fish) (3 Lbs)2 cup Beer Batter (McCormick) (by NANIMAL52) 1 can or bottle (12 fl oz) Regular Beer .5 cup Peanut Oil
1) Cut fish into 1 inch chunks
2) dip into batter
3) heat enough oil in a Cast iron skillet to cover the fish. O used a 12 in skillet and about 3 cups oil. I guess about 1/2 cup oil is absorbed by the batter.
3) fry in oil for 3 minutes
4) repeat until all fish is cooked. You can keep earlier cooked fish warm in the oven at 170 degrees until all fish is cooked.
Serving Size: makes about 6 servings
