Avocado and White Bean Salad with Lime Dressing

1/2 avocado1/2 tomato, medium1/4 cup white beans1/2 cup arugula or mixed greens4 basil leavesLime juice, 1/2 of a lime1/4 tsp salt1/8 tsp pepper
Chop the avocado and tomato into 1/2" pieces.
Tear greens into bite sized pieces, and the basil into small pieces.
Put greens and avocado mixture in a bowl with the beans.
Squeeze the lime juice over the salad, and sprinkle with salt and pepper.

Have made this several times - but did not rate it. I use cooked soy beans instead of white. Same great flavor though. Spinach and dried basil work as substitutes for arugula and fresh basil leaves. An excellent high-fiber lunch for one! Start with 1/2 of the lime juice and build up to taste. - 10/17/07
