Raspberry Bran Muffins

Ingredients
1.25 cup bran cereal1.0 cup Milk, 2%25.0 raspberries, quartered 1.0 tsp Vanilla Extract0.25 cup Applesauce, unsweetened1.0 tbsp Butter, unsalted, melted1.0 large Egg, fresh, whole, raw1.25 cup 100% Whole Wheat Flour2 tbsp packed Brown Sugar1.0 tbsp Agave nectar1 tbsp Baking Powder0.25 tsp Salt0.5 tsp Lemon Peel
Directions
Heat oven to 400 degrees. Spray bottom of 12 muffin cups or use paper liners. Place cereal in food processor. Pulse until fine crumbs. Add milk and vanilla. Let set for 5 minutes until milk is absorbed. Mix in melted butter applesauce, egg, and agave. In a medium bowl, combine flour, brown sugar, salt, and baking powder. Stir cereal mixture and raspberries into flour mixture just until flour is moistened. Batter will be lumpy. Divide batter equally into muffin cups. Bake 20-25 minutes or until toothpick inserted comes out clean.
