Ingredients
1kg Ground beef2 slices Smoked Bacon, chopped800 grams (2 cans) canned tomatoes, red, ripe, whole, no salt added 70 grams (1/2 tub) Tomato Paste OR 1/2 jar of chilis in adobo 420 grams (1 can) Yellow Sweet Corn, Canned 400 grams (1 can) Edgell Black Beans 3 medium Onions, diced6 cloves garlic, minced 2 dash Black Pepper, ground1 tsp Course Sea Salt1 tbsp Sweet Paprika 1 tbsp Smoked Paprika 1 tbsp crushed red pepper flakes1 tbsp Cayenne Pepper, ground1 oz Maker's Mark Bourbon Whisky1 tbsp Cocoa, dry powder, unsweetened 1 tbsp Oregano, ground 4 tbsp Extra Virgin Olive Oil 1 serving Bacon, John Morrell,
Directions
Step 1:
Heat pot on medium flame, add olive oil. Season beef with ground salt and pepper before browning. Do not break meat apart, instead leave large chunks. Set aside.
Step 2:
Cook bacon in same pot until slightly brown. Set aside with beef.
Step 3:
In same pot, cook onions until slightly translucent. Add minced garlic and cook for 1 minute or until fragrant.
Step 4:
Add sweet paprika, smoked paprika, red pepper flakes, cayenne pepper and cook until fragrant. Ensure spices do not burn. Add tomato paste or chilis in adobo and cook until fragrant.
Step 5:
Add meat and mix thoroughly. Add whole canned tomatoes and crush.
Step 6:
Add oregano, cocoa, bourbon, canned corn and canned beans. Cook on low heat or transfer to slowcooker. Cook for 1 - 3 hours.

Serve with sour cream, fresh coriander, lime juice, and pickled jalapenos.

Serving Size: Makes 8 servings (1 x 190ml standard ladle)
