Crustless Bacon & Egg Pie

5 large Eggs 120 mls Milk (full fat)1 diced spring onion2 large Mushrooms, fresh 2 pieces Bacon120 grams Colby Cheese, gratedTomato slices1/2 tbsp chopped Chives 1/2 tbsp Parsley 1 dash Pepper, black
Preheat oven to 180C.
Whisk eggs and milk, as well as herbs. Add in other ingredients and cheese. Keep some for topping.
Pour mixture into lined or greased 20 inch baking/quiche dish. Sprinkle with leftover cheese.
Add on tomato slices.
Bake for 20-30 minutes until cooked through and golden on top.
Enjoy!
