Okinawan Super Soup

Ingredients
5 cups water4¼ oz (120g) dried burdock root11¼ oz (320g) diced turnip7 oz (200g) diced carrots7 oz (200g) diced potato2.8 oz (80g) diced onion5.6 oz (160g) pork strips2 cloves garlic 0.5 tsp ground turmeric (to taste)4 g salt (to taste)1¼ tsp soy sauce (to taste)
Directions
Combine first 8 ingredients (through garlic) and simmer for 20 minutes.

Add turmeric, salt and soy sauce and serve.

Serving Size: makes 4 1½-cup servings
