Spring Potatoes With Garlic Scapes

8-10 ( approximately) New potatoes... Red, Blue, Yukon, Fingerling whatever is available from your green grocer or Farmers MarketBe Creative - roughly a Quart basket from the farmers market.3 tsps Olive oilwater to cover1/2 tsp Sea Salt or Kosher saltBlack cracked pepper2 garlic scapes finely chopped
Clean and place potatoes, water and salt in 2 quart saucepan. Drizzle olive oil over potatoes.
I like to add olive oil to my boiled potatoes anyway it keeps them from boiling over.
Bring to a boil then lower to simmer till almost tender, 15 to 20 minutes (this is dependant on the type size of potato) add garlic scapes and simmer anothe 4-5 minutes. Add black cracked pepper and serve.
You can add low or non fat sour cream, or light ranch if desired.

I am glad to find your recipe. We are buying a share at a CSA. Scapes and potatoes are both on the list of what should be available. I had not heard of scapes before. I know we will love this recipe, so I am rating it. We have bought different kinds of potatoes from the Amish in the past. - 1/31/11
