Low Carb Chicken Parmesan

Ingredients
4 boneless, skinless chicken breast 2 large Egg, slightly beaten 1 tbls Water .5 cup Carbquik Baking Biscuit Mix 0.75 cup Grated Parmesan Cheese 1 cup Part Skim Shredded Mozzarella 0.5 cup Prego Farmers Market Classic Marinara 1 tbsp Vegetable Oil
Directions
1. Combine eggs, water and 2 tsp. of oil. Set aside

2. Combine breading mix and 1/2 cup of Parmesan cheese

3. Dip chicken in egg mixture then coat in bread mixture.

4. Heat oil in heavy skillet. Brown chicken breasts over medium heat for 6-8 minutes per side.

5. Remove to sheet pan or baking dish. Pour marinara over chicken.

6. Top each breast with mozzarella and remaining Parmesan cheese.

7. Bake at 350 degrees for 20-25 minutes, or until cheese is melted.
