Scallop Red Potato

Ingredients
2/3 cup Finely Shredded Italian Style 1 cup Fat free Milk, Publix Brand4 medium (100g) Red Potato 2 tbsp Butter, unsalted 2 tbsp Flour 1 medium (2-1/2" dia) Onions, raw (sliced thin)1 dash Salt 1 dash Pepper, black add more to taste
Directions
Slice potatoes(thin or thick) and boil until lightly tender. Drain and set aside. Place butter in pan and let it melt over low heat. Add milk, salt and pepper and whisk slowly the flour and then the cheese until thick. Add potato and onions and stir until all coated and then place them in a greased baking casserole dish. Bake for 30 minutes @ 300
