16 oz Cod (fish) .75 cup Arrowroot flour 5 tbsp Flour, Coconut - Nutiva 9/14 (by ALILDUCKLING) 1 serving Duck Egg (1 egg) 1 tsp Dill weed, dried 1 tsp Rosemary, dried 4 tbsp Lard 2 tbsp Coconut Oil, Better Body Foods Naturally Refined Organic Coconut Oil salt & pepper to taste
mix arrowroot, coconut flour, and spices. I used spice blends that i had handy so any you like will do. you may like more spice than this...
scramble the duck egg and add a touch of water or cream if desired
cut the fish into smaller chunks (mine was already pre-cut)
heat the lard and/or coconut oil in a skillet. You may use less and simply pan cook the nuggets but i put enough oil in the pan to shallow-fry them. If you simply keep the surface of the pan greased you will save substantial fat from the recipe!
dip the fish in the egg, then dredge in flour mixture and fry on each side until golden.
after all the nuggets were coated i mixed all the leftover flour mixture into the leftover egg, and then cooked that up like a pancake. it had a nice delicate texture and worked a bit like a tortilla to hold a couple of nuggets with some salad greens.
it won't make enough for everyone, but it's a great way to use up the leftovers!
