1 x can chick peas, drained1 x carrot, chopped1 x zucchinni, chopped2 x parsnips, chopped2 x tomatoes, chopped1/2 x red capsicum, chopped1 cup broccoli, chopped3 tspn powdered stock1.5 tspn cayenne pepper1 tspn turmeric1 tspn mint1 tspn coriander1 tspn ginger1 tspn garlic1 tpsn chilli1 tspn lemongrass2 tbspn water3 cups water
Chop all vegies and place in a large bowl. Add stock powder, cayenne pepper, turmeric, mint and coriander to bowl, and mix well.
Heat up a large pot, and add ginger, garlic, chilli, lemongrass and 2 tbspns water. Once simmering and flavours are aromatic, add vegetables and stir well.
Once well mixed, add 3 cups of water and rice, bring to a simmer and cook for 2 to 3 hours.
Makes 3 large serves, or 4 smaller ones.
