Scotti's Tuna Patty

Ingredients
2 cans chunk light albacore tuna (in water)1 egg1 egg white.25 cooked couscous.25 C onions2 Tbls. fresh cilantrojuice of 1 lemonseasonings (garlic, lemon pepper, tabasco, red pepper flakes, etc.)
Directions
Cook the couscous while mixing all other ingredients together. Form into patties, should make 3-4 (1/2cup) sized patties. Spray pan with cooking spray/olive oil spray, etc... I cook mine on med/high heat. The point is to get them a little crispy on each side. After each side is brown and crispy I throw them in the oven on 350 for another 10 minutes or so.

Try adding different things: jalapenos, lime juice, green chilis, avocado...the possibilities are endless! I am sure you could use 2 egg whites or eggbeaters as well, I just haven't tried it yet.
