Red Lentil and Kale Curry IP Instant Pot

2 tsp Olive Oil 1 medium Onions chopped2 medium Carrots, chopped1 chopped Green Pepper1 TBSP Curry Powder (I used my Sri Lankan Roasted, homemade) 1 tsp Ginger, ground 1 c Lentils, red split (1/2 c= 96 g dry) 0.5 cup coconut milk (I used cocoland) 2 cup chopped Kale
In IP, sauté oil, carrots, peppers and onions till browning nicely. Stir frequently.
Add curry, ginger and lentils, stir about 1 minute then turn off IP.
Add water and set to pressure for 10 minutes. Let pressure release naturally; at least 10 minutes.
Stir in coconut milk and kale, letting the kale soften and wilt.
Serve with lemon wedges if desired.
Serving Size: Makes about 5, 1-c servings
