Tuna Avocado Lettuce Wraps

One 6 ounce can water packed tuna, drained 2 tablespoons fresh parsley (I used flat leaf parsley)1 teaspoon extra virgin olive oilJuice of 1/2 a lime1/4 teaspoon of saltFreshly ground black pepper1/4 avacado, peeled and sliced thin1 tomato, sliced (I diced the avacado and tomato for easier wrapping)3 large romaine lettuce leaves
In a bowl, mix the tuna, scallions, parsley, extra virgin olive oil, lime juice, salt and black pepper. Put one third of the tuna mixture, avacado and tomato on each romaine leaf and fold into a wrap (I added these to the bowl and tossed instead). Serves 1
