Swiss Chard Lentil Soup IP

1 Tbsp Canola Oil1 medium Onion. chopped3 cloves Garlic, minced3 stalks Celery, chopped2 cup Carrots, (3-4 carrots) chopped 6 cup (est- 1 bunch) Swiss Chard, chopped and stems chopped and separated 15 oz Crushed tomatoes, canned (small can or about 1/2 lg can)1.5 cup Lentils brown (dry) 0.5 lemon 1 tsp Better Than Bouillon Vegetable soup base + 1c boiling water4 c water
In instant pot, saute onions and oil for a few minutes, then add garlic. Cook another minute or two then add carrots, celery and chopped chard STEMS only. Saute another 3-5 minutes.
Pick through lentils then rinse.
Add lentils, tomatoes, water (mix 1 c of water boiled with veggie paste) and s&p to taste, or season later.
Press SOUP button, OR pressure cook 10 minutes and use natural release. (Same)
Open carefully when valve drops, stir in chard leaves and lemon juice. Adjust seasoning if needed.
Serving Size: Makes about 12, 1-c servings
