Balsamic lemon chicken and rice

Ingredients
Smart balance, garlic, green onions, zucchini, white wine, thyme, balsamic vinegar, 6 oz Greek lemon chicken, 2 cups instant long grain rice, mushrooms, celery, 2 cups ff chicken broth
Directions
Melt smart balance in nonstick skillet, saute minced garlic, g.onion, celery about 1 minute. Turn heat to low. Stir in dry rice until coated with smt balance. Add white wine and balsamic vinegar stir and allow rice to absorb. Add broth, mushrooms, zucchini and chopped chicken. Return mixture to a boil. Remove from heat and cover. Let stand 5 minutes until rice is done. Salt and pepper to taste.
