Veggie Fritatta(modified South Beach recipe)

Egg BeatersSpinachEvaporated milkpeppermushroomsonionsFF shredded mozzarella
-Spray dutch oven with cooking spray.
-Sautee onions until soft.
-Add spinach and mushrooms and sautee for about 5 minutes.
-While that is cooking combine egg substitute and evaporated milk and whisk until frothy.
-Add egg substitute/evaporated milk combo to the dutch oven.
-Turn heat to low and cook until the bottom is set and the top is almost set.
-Sprinkle with cheese.
-Place in the oven and cook until mixture is set.
-Serve hot.

There are no measurements for the ingredients,so how can there be an accurate nutrition chart? I could make this in a 8 x 13 cake pan and divide it into 4. The nutrition values would certainly vary from what is here. It says Dutch oven not but not what size. Please help,I'd like to try it but. . - 7/2/09
