L.R. creamy sausage stew

2 quarts potatoes, chopped into large pieces2 cups carrot chunks2 cups chopped onions1 cup chopped sweet pepper1 8-oz. pkg. fresh mushrooms, quartered if large28 oz. smoked turkey sausage1 T. olive oil1 T. basil2 1/2 tsp. salt1 tsp. pepper 2 cups half and half3 T. cornstarch3 T. water
In a large roasting pan with a lid, combine vegetables and sausage. Drizzle with olive oil and sprinkle with seasonings. Toss to combine. Bake covered at 350 for 45 minutes. Stir and add the half and half. Return to oven for another 40 minutes or until vegetables are tender. Place pan on stove top and bring to a boil over medium high heat. Combine cornstarch and water. Stir into stew and continue to cook and stir until thickened and bubbly throughout. Makes 12-1cup servings.
