Jo's Indian Style Cauliflower Rice

Ingredients
10 gram Tesco Tikka Curry Powder MEDIUM 10 gram Tesco Tomato Puree (Double Concentrate) 2 clove Garlic 50 Grams Tesco Finest British Echalion Shallots 1 head, medium (5-6" dia) Cauliflower, raw 10 gram coriander, fresh 10 Ml Olivado Extra Virgin Advocado Oil per 100ml
Directions
Finely chop onions and garlic.
Heat oil in pan, add garlic and onions, gentle fry for 5 minutes.
Blitz cauliflower head in multi-chopper until grain of rice size.
Add cauliflower to frying pan with onions and garlic. Also add Masala curry powder to pan along with tomato puree and pinch of fine ground sea salt.
Mix this all together and gently fry for 5 minutes until completely combined and cooked.
Serve immediately with chopped coriander.
Alternatively you can add the coriander and stir into the mixture in the frying pan 1 minute before serving.
