Homemade Pumpkin bread

Ingredients
2 cup King Arthur 100% Unbleached White Whole Wheat Flour 1 cup Organic All-Purpose White Flour 8 tbsp *Flax Seed Meal (ground flax) 1.5 tsp Morton Iodized Salt 2 tsp Baking Soda 1 tsp Cinnamon, ground 1 tsp Nutmeg, ground 1 tsp Allspice 2 cup Libby's 100% pure canned pumpkin 2.5 cup Granulated Sugar 4 large Egg, fresh, whole, raw .66 cup (8 fl oz) Water, tap 1 cup Applesauce, unsweetened
Directions
Sift dry ingredients together in a bowl. Take a separate mixing bowl and mix in the sugar, eggs and pumpkin. Add the dry ingredients to the mixing bowl. Add the water and applesauce and mix well.
Pour into 2 large loaf pans sprayed with cooking spray. Bake 350 degrees for 60 minutes or until toothpick inserted comes out clean. Cool and wrap well. May freeze or share a loaf with a friend.
Optional: may add nuts. Recipe does not include nuts in the serving breakdown.
