Beef - Stuffed Green Peppers

Ingredients
3 Med. Green Bell Pepper1 tbsp Extra Virgin Olive Oil12 oz 85% Lean Ground Beef1/2 cup, chopped Onions, raw1/2 tsp Oregano, ground 1 tsp Basil 2 cup Cauliflower, frozen, riced15 oz can Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano1 oz Mozzarella Cheese, whole milk 3 tbsp Parmesan Cheese, grated
Directions
Cut top off Peppers and clean out. Dice the tops.

Brown the meat, onions, pepper pieces and spices. Add tomatoes and caulli-rice, simmer to evaporate liquid.

Fill the peppers. Bake at 375 for 25-30 minutes. Add cheese and return to oven for 5 more minutes.

Serve with optional hot sauce.
