Ingredients
2 1/2 cups cooked, diced chicken breast (no skin)1/4 cup chopped pecans (or walnuts)1/2 cup celery, finely chopped1/2 cup onion, finely chopped3/4 cup fat free mayonnaise1 tablespoon dijon mustard1 tablespoon fat free ranch dressing2 teaspoons lemon juicesalt and pepper to taste
Directions
1. In a bowl, whisk together the mayonnaise, dijon mustard, ranch dressing, salt, pepper, and lemon juice until smooth.
2. Add the chicken, pecans, celery, and onion. Stir to combine
3. Cover and refrigerate for an hour before serving.
Notes: the nutrition facts do not reflect the salt/pepper.
-Adding apples, berries, or other fruits will make this recipe go farther, as well as adding more celery.

    Very good! I added extra celery, grapes and 1 c. of peas to help it go further. It was really good. For supper one night I ate it with lettuce and made it a meal. I will make it again! - 8/4/08
