6 serving Kirkland Organic Tortilla Chips (14 chips=1 oz) 10 serving Egg (Eggland's Best Organic) 1 egg 0.75 cup Colby and Monterey Jack Cheese shredded 63 gram(s) Boiled Ham (3 slices) (diced)1 medium (approx 2-3/4" long, 2- Sweet peppers (bell) (diced)4 serving Pam Olive Oil - 1 second spray (by AMYSOTIS) 10 tbsp Full Circle Organic Medium Salsa season with salt, pepper, cilantro and a dash of cumin
Spray a large skillet with Pam Olive Oil spray (I used 4 pumps) heat over medium high heat. Add diced peppers and saute for about 2 to 3 minutes then add diced ham and continue to saute until hot. Add beaten eggs and scramble to desired consistency ( we like ours soft but not runny) season with salt, pepper, cilantro and cumin (or taco seasoning for an extra kick).
Spread chips out on a large shallow baking sheet, top with scrambled egg mixture and cheese. (try to evenly distribute ingredients) Put in oven under broil HI for a couple of minutes. Keep a close watch because the cheese melts super fast! Top with salsa and ENJOY
Serving Size: divide into 6 equal portions
